Breakfast Christmas Chiilaquiles Two Ways

One of our favorite places to go at Christmas time is Cabo San Lucas. We have done it twice and was planning on going this Christmas but as plans do, they changed at the last minute. Our plan is to have this for our Christmas morning breakfast to remind us of the swaying palm trees and light ocean breezes.

Breakfast Chiliquiles Two Ways

Traditional chiliquiles served two ways in one unique breakfast dish!
prep time: 15 Mcook time: 15 Mtotal time: 30 M

ingredients:

  • 1 bag plain corn tortilla chips
  • 1 c red enchilada sauce
  • 1 c verde enchilada sauce
  • 2 c. Cotija cheese
  • Cilantro
  • Mexican Crema
  • Avocado
  • Diced Onion

instructions:

How to cook Breakfast Chiliquiles Two Ways

  1. Preheat an oven to 350 degrees Fahrenheit. Arrange the chips in a 13 x 9 baking pan. Lightly spray with oil and bake for 15 minutes or until crisp.
  2. Pour the red enchilada sauce on one half of the chips, and the green on the other half of the chips.  Top with cojita cheese.  Bake until hot and bubbly.
  3. Remove from oven. Serve immediately with cilantro, sour cream, fried eggs, sliced avocados and diced onion.

NOTES:

Sometimes we add the onion to the casserole and let it bake with the chips. It softens the onion and takes away the bite. We don't mind using yellow, white or red onion in this dish.
