It's Day 2 of #ChristmasCookiesWeek and I am keeping to a theme here: oatmeal cookies! Yesterday's cookie was a Quick Maple Oatmeal Cookie and today I am sharing with you an equally delightful oatmeal cookie. It's called the Chocolate Chunk Cherry Oatmeal Cookie. Doesn't it sound decadent?
This cookie uses a classic oatmeal cookie dough and with a few stir-ins, becomes something totally different. The cookie recipe is below. What I love about this cookie recipe is that it gives you soft and chewy cookies. That means the cookie might look underdone when you first pull it out of the oven but let it rest according to the instructions, and the cookie will do its magic!
In this cookie dough, there aren't a lot of spices. Feel free to add your favorites. We like the oatmeal and sugar to shine, so we keep it very simple. For this cookie we stir in some dark chocolate chunks and place a maraschino cherry on the top to make it festive!

Cherry Chocolate Chunk Oatmeal Cookies
Ingredients
- 1 and 1/2 cups all-purpose flour
- 1 cup packed light or dark brown sugar
- 1 1/2 c softened butter
- 1/2 cup granulated sugar
- 2 large eggs, at room temperature
- 1 tablespoon dark molasses
- 1 teaspoon pure vanilla extract
- 2 teaspoons pure maple flavoring
- 3 cups old-fashioned whole rolled oats
- 18 maraschino cherries cut in half
- 1 cup dark chocolate chunks
Instructions
- Whisk the dry ingredients together: flour, cinnamon, baking soda, and salt together in a medium bowl. Set aside.
- In a large bowl using a mixer fitted with a paddle attachment, beat the butter on medium-high speed until smooth, about 1 minute. Add the brown sugar and granulated sugar and beat on medium-high speed until creamed, about 2 minutes. Add the eggs, molasses, and vanilla and beat on high speed until combined, about 1 minute. Scrape down the sides and beat again as needed to combine.
- Add the dry ingredients and beat well. Add the chocolate chunks and stir in.
- Preheat oven to 350°F. Use a large cookie dough scoop, about 3 Tablespoons of dough per cookie, and place 4 inches apart on the baking sheets. Top each cookie with a half maraschino cherry. Bake for 13-14 minutes or until lightly browned on the sides. The centers will look very soft.
- Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
