Easy Holiday Cookies

 These Easy Holiday Cookies are perfect for when the grandkids come over and they want to help bake Christmas cookies. I loved baking with my two grandmothers and they both had a recipe that tastes like this one does, except it was rolled in powdered sugar before baking. I am betting you can do that with this recipe as well, let me know if you try it out!



I love the fudgy cookie that's a little bit crisp and a little bit chewy.  The icing makes a glaze that firms up with just a hint of chocolate and it is delicious.  It is fresh, minty, and fudgy, all at the same time. The recipe is very simple, too.  If you find that the dough is too dry, add another egg to the mixture and beat thoroughly.

Easy Holiday Cookies

These easy cookies are perfect for the grandkids to help with!

Ingredients

  • cooking spray
  • 1 pkg brownie mix
  • 1/2 c vegetable oil
  • 1 egg
  • 1/3 c chocolate chips
  • 1 small container of chocolate icing
  • 1/4 t peppermint extract

Instructions

  1. Preheat oven to 350. Coat baking sheets with cooking spray or parchment paper.
  2. Beat brown mix with egg and oil in large bowl until dough forms. Stir in chocolate chips.
  3. Drop by rounded tablespoonful onto cookie sheets. Place cookies about 2" apart. Bake 9 minutes or until set. Cool for 5 minutes.
  4. Mix icing and peppermint extract together. Heat in microwave for 30 seconds. Dip cooled cookies into the icing and let harden.
